Since founding the company, Wellington has combined his native Brazilian roots, deep culinary expertise, and a relentless commitment to hospitality to shape one of the most respected restaurant groups in the region. But it’s his leadership that truly defines him. As CEO and President, Wellington oversees every facet of the business—from culinary direction to front-of-house operations, team development, guest experience, and strategic growth.

He trains and empowers staff across all levels of the company, guiding them to grow within their roles and advance their careers.
